When it's Monday, throughout Brevard, restaurateurs take the day off to receive weekly food shipments, take inventories, plan menus, deep-clean kitchens, fix whatever needs to be fixed and do whatever else requires doing before things get hectic again Tuesday. Some take the day as an opportunity to unwind and refresh after another hectic weekend.
